NOTE FROM CHEF RICHARD NIGRO: A satisfying full dinner featuring the flavours of Bryson’s Farm; simple and light enough to serve on a cool summer’s evening, rich enough to sustain a body as the season’s turn cold.  Pasta is tossed in a long-simmered sweet pepper-tomato sauce, flavoured with a splash of white wine and a bundle of thyme, made rich and creamy with fresh, soft goat’s cheese with organic lemon-herb-garlic marinated chicken and lightly wilted farm spinach.
